The STEELPORT 10” Slicer Knife combines the best attributes of a slicer and cimeter. The curved blade ensures full contact on the cutting board and keeps your knuckles from hitting the board for a comfortable feel.

A long slicing knife is ideal for trimming and portioning large cuts of meat and fish. Any home cook or professional chef who regularly prepares larger proteins will get plenty of use out of this knife.

The STEELPORT 10” Slicer is an impressive showpiece for those who value a professional cut and presentation, whether for a special occasion like carving a holiday roast, trimming and portioning meat and fish, or precision work such as making sushi/sashimi.

Blade Shape

The curved blade and 1” heel of the STEELPORT 10” Slicer allows for more knuckle clearance on the board and is great for the portioning and trimming cuts classically used with a cimeter.

This longer 10” length prevents a sawing motion to achieve cleaner cuts. The tip of the STEELPORT slicer is sharpened, making it effective when trimming meat and fish.

Blade Material / Heat Treat

The STEELPORT Bread Knife has a unique wavy "reverse" serration allowing for cutting through the toughest bread crust, while still being more gentle on other food products if used as a serrated slicer. A wavy serration is also less destructive to a cutting board than a standard pointy serration.

The curved blade and 1” heel allows for a natural cutting motion and better knuckle clearance. A 10” blade is the perfect length for a bread knife. A longer blade can be unwieldy while a shorter blade requires too much of a sawing motion.

Handle

STEELPORT handles are contoured to accommodate any hand, offering a unique 2" height at the blade heel for finger clearance. All STEELPORT handles, are constructed using Oregon Big Leaf Maple Burl, a locally sourced, naturally unique burl wood, stabilized with resin to meet tough kitchen requirements and won’t shrink or swell.

Carbon Steel Care Tips

  • Always hand wash and hand dry (never use a dishwasher or leave in the sink)
  • Always keep your carbon steel knife clean and dry; oiling is not necessary unless it will be stored for a long period of time. Patina is natural and necessary- learn to love it.
  • If rust does occur, it is important to remove it before pitting can begin.
  • Don’t let it get dull – honing your knife while it still has an edge will prevent you from having to sharpen it often. We recommend a ceramic hone or a leather strop.
  • When sharpening, we recommend hand sharpening on a waterstone or wet grinding – avoid any aggressive machine sharpening or any draw-through automatic devices.

Handle Care Tips

  • Treat your handle like you would a wooden cutting board. Use a food safe mineral oil or oil/beeswax mix occasionally or when it will be stored for a long period of time.
